The Best Carrot Cake

This delightfully moist and luscious Carrot Cake is a firm favourite amongst many. You cant go wrong with Carrot Cake as a sweet baked treat!

Ingredients

Ingredients:
2 cups Cake Flour
4 tsp Baking Powder
2 tsp Cinnamon
1 tsp ground Mixed Spice
1 tsp Salt
1 cup Vegetable or Coconut Oil
3 extra large Eggs
2 tsp Vanilla Essence
2 cups White Sugar
440g tin of Crushed Pineapple, drained or 250g chopped Pineapple
2 cups finely grated Carrot
1.5 cups desiccated Coconut
1 cup chopped Walnuts (plus some for garnish)

Icing:
250g Cream Cheese, softened
120g Butter, softened
500g Icing Sugar
1 tsp Vanilla Essence
Juice and zest of 1 Lemon

Method

Method
1. Preheat the oven to 190 Degrees. Grease a fairly large cake tin, line the bottom with baking paper and grease that as well.

2. Mix the flour, baking powder and spices in a bowl, no need to sift.

3. Beat the eggs, oil, vanilla, and sugar very well in a mixing bowl until creamy and light in colour. The sugar will not dissolve completely.

4. Stir in the flour mixture, alternatively with the rest of the ingredients.

5. Mix well, the batter will be fairly runny.

6. Pour the batter into a prepared tin and bake for 60-70mins or until a skewer inserted comes out clean. Turn out onto a rack and allow to completely cool before icing. You can cut the cake in half when cool if you want to ice centre.

To make Icing:

1. Beat Cream Cheese with butter, vanilla essence, zest and juice. Beat and mix until smooth.

2. Mix in Icing sugar and beat well. If it’s a bit runny just add a bit more icing sugar.

3. Generously sandwich, and/or top your cake with this luscious icing and garnish with a handful of chopped walnuts.
