Stewed Pears & Gooseberries

I love stewed fruit with plain yoghurt as a breakfast! This is such a delicious combination that I tried and was SO happy with the result.

This really makes a delicious addition to your breakfast repertoire, and is best served with great big dollop of plain yoghurt with a sprinkle of nuts!

Do adjust the sugar and water to your preference, some prefer a bit more of a syrup and others more of a compote.

Ingredients

8 firm med size Pears, peeled and chopped into large chunks
2 cups Frozen Gooseberries
approx 1 cup Water
approx 3/4 cup Sugar (you can add more or less sugar as you prefer)
1 Cinnamon Stick (optional)

Method

1. Place your pears, water,cinnamon stick and sugar into a medium sized saucepan and bring to a gentle simmer. Simmer for 10mins

2. Add your gooseberries and simmer for a further 5-10mins until gooseberries are nice and soft, but still maintaining their shape.

3. Allow to cool completely and place in an airtight container and store in the fridge.

4. Serve with yoghurt & granola or even with custard as a sweet treat!
