Nut Butter

Shop bought Nut butters are expensive! Save some bucks and make your own at home.. it is so easy. I used Macadamias for this recipe, and found that it didn’t need any honey to sweeten it at all, macadamias are already quite a sweet nut. This might vary depending on which nut you use. Also note that the butter might be quite runny when you have made it, but it does thicken up when you put it in the fridge, which is where you really should store it. Although high in fat, nut butters can still go rancid. Gorgeous alternative to peanut butter, to use smoothies & bakes and another homemade item means less preservatives and nasties. Warning: Nut Butter can be very addictive!

Ingredients

500g raw Macadamia Nuts (or nut of your choice)
Pinch salt
1 Tbsp Honey (optional)
1 Tbsp Coconut/Vegetable Oil, more if needed

Method

1. Blitz together all ingredients except honey in food processor until smooth (ish!). This is where a better quality food processor does come in handy as they do tend to blend a finer butter – but really even a chunkier butter isnt the end of the world! You may need to add more oil depending on what consistency you prefer and the varying oil content in the nuts.

2. Test the sweetness before adding any honey, and if you feel it is neccesary add the honey to your preferred sweetness level.

3. Spoon into a glass jar and store in your fridge. Note that some nut butters might go quite stiff in the fridge, but this doesnt really matter if spreading on toast or using elsewhere. If you really want it a bit runnier just warm in microwave for a few seconds before using.
