Blueberry Waffles

I love crispy, sweet Belgian type waffles. A thicker batter and quite a bit of sugar. I think a traditional Belgian Waffle is actually leavened with yeast.. But this recipe is a quick and easy option for a pretty similar result. Best eaten HOT with generous dollops of Ice Cream and even better if you have a few fresh blueberries to top it with! You obviously need a waffle iron to make these.

Ingredients

1 & 1/2 cups Flour
1 cup Sugar
2 tsp Baking Powder
1 Egg
1 tsp Vanilla Extract
1/2 cup Milk
2 Tbsp butter, melted
1 cup Frozen Blueberries
Ice Cream & Fresh Berries to serve

Method

1. Mix together Egg, Vanilla, Sugar, Milk and melted Butter.

2. Slowly incorporate Flour and then add in Baking Powder.

3. Stir in Blueberries. Make sure your waffle iron is nice and hot before baking. Spray with non stick both sides, spoon about 2 Tbsp batter in centre and close. Bake for about 2 mins or until crispy and golden. You might need to do a tester to get quantity right.. Less is more otherwise batter oozes out sides!

4. Remove from waffle iron, dust with Icing Sugar and top as you please! Eat immediately as they tend to go soft if you leave them for a while.
