Blueberry, Banana & Coconut Smoothie

Both blueberries and bananas are packed with all sorts of healthy vitamins and minerals. The bananas add a bit of sweetness to this mix, and the low fat option of cooling coconut water makes it a incredibly healthy low fat smoothie bowl. If you prefer something a bit more substantial use a nut milk or coconut milk, or even yoghurt or dairy milk. This recipe is one of my favourite smoothie bowl combo’s..simple, satisfying and delicious!

Ingredients

Serves 1

1 ripe Banana
2 cups frozen Blueberries
1 cup Coconut Water (or your liquid of choice)

I find that the Checkers brand of Coconut water is the nicest and most affordable!

Method

1. Using either your food processor/nutri bullet/stick blender blitz together your smoothie ingredients, adding as much liquid as you prefer. Test the sweetness and adjust sweetness by adding more honey if you would like.

2. If the blender blade gets stuck and wont blend, stop and scrape down or mix ingredients with a spoon and repeat blending. Sometimes the mix needs a little bit of coaxing to finish blending. If its really struggling add a bit more liquid. If you have gone too far with adding liquid, remember you can always stiffen it up again by placing a bit more frozen fruit into the mix.

3. Place in a bowl and top any suitable toppings and serve immediately.
